Great product and entertaining distillery tour.

The owners are an absolute riot. The tasting room was quiet at the time, and they gave us an incredibly informative and entertaining tour of the back where all the magic happens. Their Gin is of the best I have ever had, and Im pretty sure their Absinthe is the only real Absinthe Ive ever had. Highly recommended for both the spirits and the spirit of the owners/distillers.

I visited Pacific Distilling based on the sheer whim of my husband, how lucky I was he suddenly decided to visit here. I wasnt expecting a lot at first as it is very small and unimposing, but the quality REALLY blew my mind. Their gin changed my entire perspective on what gin could and should be. There was a depth of flavor and balance far beyond just juniper, was so eye opening. For the first time in my life, I fully understand how gin can be drank neat. Additionally, their absynthe was divine. Very nice anise and fennel flavors. The head distiller was super friendly and loved talking and explains his craft. We talked for easily 20 to 30 min. He even gave us a sneak peak of an as yet released Absynthe variant. WOW, it cant get released soon enough! Overall, this is what craft distilling SHOULD be. Passion over profit, quality over marketing, and just damn good spirits. I will definitely be drinking more of their gin and Absynthe.
