I took my 8 chef knife and my 4 asian pairing knife in to way of the knife exactly one week ago. After using my knives at work for a weeks worth of shifts I can say I am happy with the level of attention they were given. Seeing the knife report was helpful for me because I could see the chips and knicks in the blade of my chef knife, and then the smooth finish after the stropping was done. Maybe itll be good for you to see too? Anyway, the last 2 to the heel on my chef knife are perfectly straight and then the blade curves to the tip. I am happy to say that before and after the same two inches are just as flat. This tells me that whatever he uses to grind the blade he keeps the current geometry and the new edge is very minimal, indicating he doesnt take a lot of material off. Overall Im really happy with my knives and the shop in general.
